Parmesan Crusted Chicken In Cream Sauce W/ Rice image

MMMMmmmmmmmmmmmmmmmm! This was sooooo good! This is a great meal if you're having company come over! They'll love it!

RICE:
2 cup(s) brown rice, raw
1 can(s) chicken broth, low salt
1/2 cup(s) water
CHICKEN:
1 sleve - ritz crackers, finely crushed
1/2 cup(s) parmesan cheese
4 - chicken breast halves, skinless & boneless
2 teaspoon(s) olive oil, extra virgin
CREAM SAUCE:
1 can(s) chicken broth, low salt
1 tub - cream cheese spread, chive & onion
1 tablespoon(s) chives, dried
- the rest of left over cracker/parmesan mixture

Steps:

  • Cook rice according to directions on package using the broth & water.
  • Meanwhile, mix cracker crumbs & parmesan cheese on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coat both sides of each chicken breast with the crumb mixture.
  • Heat oil in large non stick skillet on medium heat. Add chicken; cook 5 - 6 minutes on each side or until golden brown on both sides & cooked through. Place chicken on serving plate; cover to keep warm.
  • Add broth, cream cheese spread & chives to same skillet. Cook on medium heat until mixture just comes to a boil, stirring frequently. Serve over rice. Spoon sauce over chicken. Serve with green beans or asparagus.
