PAPAYA, SHRIMP AND AVOCADO SALAD image

Marinade
1/4 c olive oil
1/4 c dry white wine
2 teaspoon fresh lemon joice
2 Tablespoons chopped onion
Salad
30 large shrimp cooked, peeled
1 small head red leaf lettuce
1 small head Bibb lettuce
10 oz fresh spinach
2 ripe papayas, peeled, seeded, and sliced lengthwise
2 avocados, peeled and sliced
1 small cucumber, thinly sliced
1/4 c toasted walnuts
Dressing 2 green onions including tops, sliced
2 tablespoons honey
1/4 c fresh lime joice
2/3 c olive oil

Steps:

  • Combine marinade ingredients. Marinate shrimp, refrigerate for two hours. Mix all dressing ingredients in blender or food processor. Chill Arrange greens on 6 individual plates. Remove shrimp from marinate and arrange on top of leaves with alternating slices of papaya, avocato and cucumber in a pinwheel. Sprinkle with walnuts and drizzle with dressing.
