Papa Don's Southern Meatloaf with Crackers image

This real Southern meatloaf is made with crackers.

Number Of Ingredients 12

½ pound ground beef
½ pound ground lamb
2 cups crushed unsalted crackers
4 ounces frozen peas
4 ounces frozen diced carrots
1 medium onion, diced
1 large egg
¼ cup Worcestershire sauce (such as Lea & Perrins®)
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
8 ounces shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, ground lamb, crushed crackers, peas, carrots, onion, egg, Worcestershire sauce, garlic, salt, and pepper in a bowl. Mix until well incorporated and transfer into a loaf pan. Spread out evenly.
  • Bake in the preheated oven until meatloaf is cooked through, about 35 minutes. Sprinkle Cheddar cheese on top and return to the oven. Bake until cheese is melted, about 5 minutes more.
