PAN SEARED TILAPIA image

Yield 4 servings

Number Of Ingredients 9

4 (6 ounce) tilapia filets
1/2 tsp salt
1/2 tsp ground black pepper
1/2 cup whit win
2 tbsp finely shopped shallot
2 tbsp fresh lemon juice
2 tbsp fresh orange juice
4 tsp olive oil
2 tsp sherry or white win vinegar

Steps:

  • Heat some olive oil over medium-high heat in a skillet. Season the fish with salt and pepper. Cook on each side for about 4 minutes until cooked through. Remove from pan and keep warm. Add wine to pan and cook for about 30 seconds until almost evaporated. Combine shallots and remaining ingredients in a separate bowl using a whisk. Add 1/4 tsp salt and pepper. Add mixture to pan and cook until heated through for about a minute stirring frequently.
