PAN-SEARED PORK CHOPS WITH WARM PEACH SALSA image

1 tablespoon olive oil
4 pork chops
Salt and pepper
1 cup mild fresh salsa
2 peaches, peeled and chopped

Steps:

  • Heat the oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper. Add them to the pan and cook for 3 to 6 minutes per side, depending on the thickness, or until browned and cooked through. Transfer the chops to a plate. Add the salsa and chopped peaches to the skillet, and cook for 1 minute, stirring, until warmed through. Pour the salsa over the pork chops, and serve hot. (Makes 4 servings) Variations Buy thin pork chops cut from the loin (about 1/4 pound each) for this recipe.
