PAN-SEARED CHICKEN WITH QUICK LEMON-HERB SAUCE image

Number Of Ingredients 8

1 tablespoon olive oil
4 boneless, skinless chicken breasts
Salt and pepper
1 teaspoon dried thyme, chives, or parsley
1/4 cup reduced-sodium, fat-free chicken broth or water
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh thyme, chives, or parsley (optional)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, and then sprinkle them with the dried herbs. Add the chicken breasts to the pan and cook, undisturbed, for 5 minutes. Carefully flip the chicken pieces and continue cooking another 4 to 5 minutes, or until chicken is browned and cooked through. Transfer the chicken to a serving plate. Add the remaining ingredients to the pan, stir to combine, and cook 1 minute. Pour over the chicken. Serve immediately. (Makes 4 servings) Variations Look for turkey cutlets in your grocery store -- they're low in fat and can be used instead of chicken for this recipe.
