Ozark Pudding (From Bon Appetite) image

This pudding was served at Marshall Field's in Chicago. It is reported that Ozark Pudding was President Harry Truman's favorite dessert.

1/3 cup all-purpose flour (measured then sifted)
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 egg
3/4 cup sugar
1/2 cup apple, peeled and chopped
1/2 cup pecans, chopped
1 teaspoon vanilla

Steps:

  • Preheat oven to 325°F Butter 1-quart casserole or souffle dish.
  • Sift together flour, baking powder and salt.
  • Beat egg and sugar until light and fluffy. Sir in vanilla.
  • Add flour mixture and blend well.
  • Fold in apple and nuts.
  • Spoon into prepared dish and bake 30 minutes.
  • Serve warm with whipped cream or vanilla ice cream.
