Oysters and Sausage in Pastry Shells image

Number Of Ingredients 14

6 frozen pastry shells
1/2 pound frozen breakfast sausage links
1 pint shucked oysters, drained and liquid reserved
2 tablespoon butter
1 cup fresh mushrooms
1/2 cup green onions, thinly sliced
2 tablespoon flour
1 cup chicken broth (plus ½ c of reserved oyster liquid)
1/4 cup dry sherry
1/2 cup heavy cream
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon tabasco sauce
1 batch chopped parsley for garnish

Steps:

  • Bake pastry shells
  • Cut sausage into ¼ in thick disks
  • chop oysters
  • heat butter in sauce pan and sauté mushrooms and onions in butter
  • add flour
  • add stock and oyster liquid slowly
  • stir in sherry and continue to stir to thicken
  • stir cream and seasonings add oysters and sausage stir and heat for 5 minutes
