Oven roasted cauliflower soup image

I love vegetables any which way & want to incorporate them into the family diet a many ways as possible. This is one way of everyone getting a healthy introduction for a meal

Number Of Ingredients 8

1 head cauliflower broken into florets
olive oil cooking spray
1/4 cup(s) olive oil
1 large onion
4 clove(s) garlic
4 cup(s) waer
1 chicken bouillon cube
salt & pepper to taste

Steps:

  • Place the cauliflower florets into a rage bowl of lightly salted water; allow to stand for 2 minutes. Drain well & arrange on a sheet of wavy aluminum foil lined baking sheet. Spray the olive oil cooking spray evenly the cauliflower
  • Preheat oven broiler & set the oven rack about 6 inches from the heat
  • Broil the cauliflower until browned - about 20-30 minutes
  • Heat the olive oil in a large soup pot, cook the onion until translucent-abut 5 minutes, stir in the garlic and roasted cauliflower. Poor in the water. Season with salt & pepper and simmer until all the vegetables are tender- about 30 minutes.
  • Blend the soup in the pot with an immersion hand blender until cream & smooth.
