I love vegetables any which way & want to incorporate them into the family diet a many ways as possible. This is one way of everyone getting a healthy introduction for a meal

Steps:
- Place the cauliflower florets into a rage bowl of lightly salted water; allow to stand for 2 minutes. Drain well & arrange on a sheet of wavy aluminum foil lined baking sheet. Spray the olive oil cooking spray evenly the cauliflower
- Preheat oven broiler & set the oven rack about 6 inches from the heat
- Broil the cauliflower until browned - about 20-30 minutes
- Heat the olive oil in a large soup pot, cook the onion until translucent-abut 5 minutes, stir in the garlic and roasted cauliflower. Poor in the water. Season with salt & pepper and simmer until all the vegetables are tender- about 30 minutes.
- Blend the soup in the pot with an immersion hand blender until cream & smooth.
