Oven-Roasted Beef Au Jus image

Number Of Ingredients 9

3 lb chuck roast, cut in 2" thick pieces
1/4 tsp pepper
2 tsp salt
1 beef bouillon cube
1 c boiling water
1/2 tsp marjoram
1/2 tsp ground savory
1/4 tsp sage
2 oz mushrooms, drained

Steps:

  • 1. Rub surface of roast with salt and pepper.
  • 2. Place the roast on a rack in a shallow open pan.
  • 3. Insert roast meat thermometer into the center of the thickest portion.
  • 4. Roast in 325 oven about 2 - 2 1/2 hours or until the meat thermometer reaches 160 for a medium done roast.
  • 5. Remove roast to warm platter.
  • 6. Serve with hot seasoned juices from pan.
  • 7. AU JUS: Add a small amount hot water and stir the brown bits from pan and rack into the drippings.
  • 8. Measure drippings.
  • 9. Add dissolved bouillon to bring drippings to 2 cups.
  • 10. Pour into roasting pan. Blend in herbs and mushrooms.
  • 11. Simmer 5 minutes.
