I LOVE Chimichangas, but dislike frying anything! These are easy and very good!

Number Of Ingredients 9

2/3 cup(s) picante sauce or your favorite salsa
1 teaspoon(s) cumin
1/2 teaspoon(s) dried crushed oregano
1 1/2 cup(s) cooked chicken-chopped
1 cup(s) shredded cheddar cheese
1/4 cup(s) chopped green onions (i've used regular before)
6 - 8" flour tortillas
2 tablespoon(s) margarine melted
- additional cheese and salsa for topping as well as sour cream or whatever you desire

Steps:

  • Mix salsa, cumin, oregano, cooked chicken, cheese and onions.
  • Place about 1/4 cup of chicken mixture in the middle of each tortilla. Fold opposite sides over filling. Roll up from bottom and place seam side down on a baking sheet.
  • Brush with melted margarine
  • Bake at 400 for about 20-25 minutes until golden brown. I have also added black beans to the chicken mixture. Serve with salsa, cheese, sour cream, guacamole....whatever you like!
