ORZO, PINE NUT, & FETA SALAD image

Number Of Ingredients 6

1 lb. orzo
3 T fresh lemon juice
1/2 c olive oil
1/2 c pine nuts, toasted
1 1/4 c feta (6oz) crumbled
1 c thinly sliced scallions

Steps:

  • 1. Cook orzo in 6-8 qt pot of boiling water until tender, then drain well in colander. 2. Whick together lemon juice, oil, & salt & pepper to tast in large bowl, then add hot orzo & toss. Cool orzo, then toss q/ pine nuts, feta & scallions. Season w/ salt & pepper
