Oregon Trail Gazpacho image

Great summertime quick, easy salad. Refreshing with any meal. Works nicely in most diets.

1 cucumber, diced
2 Roma tomatoes, diced
1 small sweet onion (such as Vidalia®), diced
3 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
1 clove garlic, crushed
2 leaves fresh basil, chopped
½ teaspoon Italian seasoning
⅛ teaspoon freshly ground black pepper
⅛ teaspoon salt

Steps:

  • Combine cucumber, tomatoes, sweet onion, vinegar, olive oil, garlic, basil, Italian seasoning, black pepper, and salt in a bowl; refrigerate until chilled, at least 30 minutes.
