Steps:
- In a large saucepan over high heat, bring the water, sugar and salt to a boil, stirring to dissolve the sugar and salt. Let cool to room temperature. In the brining bag, combine one gallon of ice water, the oranges, cloves, bay leaves and peppercorns. Add the sugar-salt solution and stir. When the brine is cool, submerge the turkey in the brine. If necessary, add more water to cover the turkey. Remove the excess air from the bag and seal. Place in refrigerator or a cooler filled with ice. Rotate the turkey occasionally to make sure it is completely covered with the liquid. Brine for a minimum of 8 hours and a maximum of 24 hours.
