One Skillet Chicken & Vegetables image

I have made this dish so many different ways. Some times I call it a Stir Fry. I have used chicken, beef, pork & even shrimp. But the vegetables are mostly the same each time. Am always trying new ways to get my family to eat more vegetables. This is another family favorite

Number Of Ingredients 11

- extra virgin olive oil
1 medium onion, julienned
4 medium carrots, sliced diagonal
1 medium new red potatoe, 1/2 slices
4 clove(s) button mushroom, halved
1 pound(s) broccoli crowns, bite size
3 clove(s) garlic, sliced
3 - chicken thighs, boneless skinless & cut into strips
1 tablespoon(s) fresh herbs, basil, oregano & thyme chopped
3/4 cup(s) chicken broth
1/2 teaspoon(s) salt & pepper mix

Steps:

  • heat large skillet over medium heat & add in a drizzle of EVOO. Saute the onion until almost translucent. The add in the carrots & potato. Stir occasionally until potatoes start to turn brown.
  • Add in the mushrooms broccoli & garlic. Cook until broccoli is just turning color & still is crisp. Remove vegetables from pan & set aside.
  • Add the chicken to the pan & cook until brown. Pour in the chicken broth & simmer until chicken is fully cooked. Stir in the veggies.
  • Add in the herbs & seasonings. taste to check & adjust the taste as needed.
