"OLIVE GARDEN" ALFREDO SAUCE (SERIOUSLY!)

This is really Olive Garden Alfredo Sauce. I absolutely love OG Alfredo and I got this recipe from a general manager. He told me after I bugged and bugged and bugged him! I haven't figured out the reheating yet...except for to reheat sauce slowly. Very slowly. The butter starts to separate if you reheat it too fast. The only place that I could find "white sauce base/mix" in my town was at Gordon's Food Service (restaurant supply store), which I guess can also be used to make biscuits. And I thought that 8 fl. oz and 1 cup were the same thing...even on a measuring cup...so I just measure to the 8 oz. line on a measuring cup. That was something that the manager emphasized to me.

Number Of Ingredients 7

1 lb unsalted butter (4 sticks)
3 tablespoons minced garlic (or to taste)
1 cup milk
2 quarts heavy cream
1 lb parmesan cheese
8 fluid ounces white sauce mix (powder form)
black pepper

Steps:

  • Melt the butter on low setting.
  • Add minced garlic when butter is about 50% melted.
  • Add milk and heavy cream and bring to a boil.
  • Turn heat down and wait about 5-10 minutes.
  • Add parmesan and white sauce mix/base.
  • Sauce should start to thicken.
  • Add pepper to taste.
  • Let cool about 10 minutes before serving over pasta.
