OLD FASHIONED CUSTARD PIE image

What a strong memory this pie brings back of all that wonderful childhood comfort food! You can still find this in some restaurants, such as MCL Cafeteria, but none quite as good as Mother used to make!

Time 55m

Number Of Ingredients 7

4 eggs, slightly beaten
1/2 c sugar
1/4 tsp salt
1/2 tsp vanilla extract
2 1/2 c milk, scalded
1 9" unbaked pastry shell
ground nutmeg

Steps:

  • 1. In a medium to large pan, bring milk to just below the boiling point--tiny bubbles will begin to form at the edges.
  • 2. While milk is heating, blend eggs, sugar, salt, and vanilla in a large bowl. Gradually stir in the scalded milk.
  • 3. Pour into unbaked pastry shell. Sprinkle with nutmeg.
  • 4. Bake on center rack in 350-degree oven for 35 to 40 minutes, or until knife inserted near center of pie comes out clean.
  • 5. Cool pie on wire rack; then chill.
  • 6. NOTE: An alternative topping: instead of nutmeg, sprinkle with 1/2 cup flaked coconut.
