OATMEAL CAKE - PAM KEMPER image

1 - 1/4 c boiling water
1 c oatmeal, uncooked (rolled or quick cooking)
1/2 c butter or margarine
1 c granulated sugar
1 c firmly packed brown sugar
1 t vanilla
2 eggs
1 - 1/2 c sifted all-purpose flour
1 t soda
1/2 t salt
3/4 t cinnamon
1/2 t nutmeg
Frosting: 1/4 c butter or margarine, melted
1/2 c firm packed brown sugar
3 T milk
1/3 c chopped nuts (optional)
34 c coconut

Steps:

  • Pour boiling water over oats; cover and let stand 20 min. Beat margarine till creamy, gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oats mixture and mix well. Sift together flour, soda, salt, cinnamon and nutmeg. Add to creamed mixture. Mix well. Put in well greased and floured 9 inch square pan. Bake 350 for 50 - 55 min. Do not remove cake from pan. For frosting, combine the butter and brown sugar, milk, nuts and and coconut. Spread evenly over cake. Broil until frosting becomes bubbly.
