Oatmeal Cake image

This is a very moist cake. A cake that my Grandmother & Mother frequently made. Great with a cup of coffee or tea.

Number Of Ingredients 9

1 c quick cooking oats
1 stick butter
1 c sugar
1 c brown sugar, firmly packed
2 eggs
1 1/3 c all purpose flour
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon

Steps:

  • 1. Pour 1 1/4 c. boiling water over oats & butter. Let stand for 20 minutes.
  • 2. Mix the sugars, flour, baking soda, nutmeg & cinnamon.
  • 3. Add eggs, 1 at a time.
  • 4. After 20 minutes, add the oats & water mixture. Mix well.
  • 5. Bake & top when done with - 6 Tablespoons soft butter 1/4 c. cream 1/2 c. sugar 1/2 teaspoon vanilla 1 c. coconut & nuts Mix & spread on cake & put in broiler for about 5 minutes or until lightly browned.
  • 6. Bake in 13x9" pan.
