Nut-Free Paleo Banana Bread image

Nut-Free Paleo Banana Bread that we put in the kids lunch boxes. This is safe for any children at school with potential life threatening allergies.

3 ripe bananas
4 eggs
1/3 cup coconut oil
1/4 cup honey
1/3 cup coconut flour
2 tablespoons flax seeds (Linseed)
3 tablespoons tapioca flour
1 tablespoon cinnamon
1/2 tablespoon baking soda
1/4 tablespoon sea salt

Steps:

  • Grease a loaf pan with coconut oil or line with baking paper.
  • Mash banana and stir in eggs, honey and oil.
  • Add the wet ingredients to the banana mix and stir until well-combined.
  • Bake at 175°C/350°F for 50 minutes.
