Not your Mothers Oatmeal Cookies! image

For some reason when I think of fall I think of oatmeal cookies!!! Found this recipe and added lots of extra ingredients (ie nuts and cocoanut). They were like I remembered

Number Of Ingredients 12

1 c butter softened
2 c brown sugar
2 eggs
2 tsp pure vanilla extract
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 c all purpose flour
2 c oatmeal
1 bag(s) chocolate chips
1 c cocoanut
1 c nuts of choice

Steps:

  • 1. Preheat oven to 350 degrees. Line large cookie sheets with parchment paper.
  • 2. In a large bowl (or a mixer with a paddle attachment) cream the butter and brown sugar together. Add eggs vanilla, baking soda, baking powder, and salt. Beat until mix is light in color and fluffy
  • 3. Add flour and oatmeal-combine. Then add chocolate chips cocoanut, and nuts--just to combine
  • 4. Drop by spoonful .( I used a scoop and made larger ones.) onto the parchment lined cookie sheets. Bake 11-15 minutes or until lightly brown--I need the 15 minutes probably because I made them big. Cool on racks
