No Bake Lemon Squares image

My mom got this recipe from her English neighbor, in the 1940's. It's so easy to make and tastes tart, yet with a sweetness to it. It's delicious and nice and refreshing. It certainly doesn't last long in our home; always have to bring some when visiting my brother! Bet you can't eat just one! Enjoy....makes a nice summer treat.

1 box(es) graham crackers
1 can(s) sweetened condensed milk
3 large lemons

Steps:

  • Line an 8" by 9 " square pan with a layer of graham crackers.
  • In the meantime, squeeze the lemons and reserve all of the juice from the three lemons. Pour sweetened condensed milk into a medium sized bowl. Pour the lemon juice into the condensed milk and stir until smooth and creamy, about 60 seconds.
  • Pour half of the lemon mixture over the prepared graham crackers; repeat with another layer of graham crackers over the lemon mixture. Pour the remaining lemon mixture over the second layer of graham crackers. Crush a couple of the crackers and sprinkle over the top. Place in refrigerator overnight. By morning, the mixture will have soaked into the crackers and also will have thickened to a yummy, mouth puckering dessert. Hope you enjoy this dessert as much as our family does.
