The salmon:
1.5 pounds filleted salmon
1 table spoon Liquid smoke
salt and fresh-ground pepper to taste
The sauce:
4 ounces cream cheese
1/2 cup cream or whole milk
1 tea spoon poppy seeds
1 tea spoon sesame seeds
2 cloves garlic
1/4 of an onion
handful of chives
salt, to taste
Garnishes:
1 teaspoon capers, rinsed
1 tomato, sliced

Steps:

  • Make the salmon: Rub salmon with liquid smoke, salt and pepper. Bring to room temperature in roasting pan. Place in 250-degree, pre-heated oven. Cook 35 minutes. Make sauce: Mince garlic, onion and chives. Place in food processor with remaining sauce ingredients. For a thicker sauce, add more cream cheese. For a thinner sauce, add more cream. Taste and adjust seasonings, remembering that salmon itself will also be somewhat salty. Assemble the dish: Place tomato slices on salmon. Top with sauce. Garnish with capers.
