New Mexico's Clotchky (Thumbprint Cookies) image

NEW MEXICO: Munch your way across the USA. Bennie Shaw, the state of New Mexico is now represented. This recipe is from "Capitol Cookies" with recipes from every state capital & Washington, DC. this recipe was submitted by Calvary Chapel de Santa Fe, Santa Fe, New Mexico, Maureen Nash, Chairperson. I personally have not made these so, Bennie, if you make these, let us know if they make your state proud.

Number Of Ingredients 10

8 ounce(s) cream cheese, softened
1 stick(s) butter, softened
1 cup(s) self-rising flour
- jam, any flavor
- powdered sugar
SELF-RISING FLOUR SUBSTITUTE:
1 cup(s) all purpose flour
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/4 teaspoon(s) baking soda (optional)

Steps:

  • Whip together cream cheese and butter. Add flour. Roll dough into a long log and wrap in waxed paper. Chill until firm.
  • Slice into 1/4" slices. Put thumbprint in middle of each slice once slices are placed onto cookie sheet.
  • Spoon 1/2 teaspoon jam into thumbprint of each slice. Bake until golden in a 350-degree oven for 10 minutes. Cool. Sprinkle with sifted powdered sugar.
