NEW ENGLAND SHRIMP CHOWDER image

Number Of Ingredients 11

3 medium onions, sliced
3 Tbs olive oil
3 1/2 cups chicken stock
5 medium potatoes, cut in bite sized chunks
2 tsp salt
1/2 tsp pepper
1 lb fresh shrimp, cleaned and de-veined.
1/2 qt milk, heated
1 bar softened cream cheese
1 1/2 cups grated cheddar cheese
2 tbs minced parsley

Steps:

  • 1 Saute onions in olive oil until tender. 2 Add stock, potatoes, salt and pepper. 3 Bring to a boil, then simmer until potatoes are tender. 4 Add shrimp. 5 When shrimp is cooked add the warm milk, sour cream and cheddar cheese. 6 Stir gently to combine, until cream cheese is melted. 7 Top with parsley and serve at once.
