Steps:
- Season chicken with salt, pepper, and LOTS of paprika; Brown chicken in 4 tbsp. butter + a little olive oil; remove to casserole dish. Add a few more tablespoons of butter to the drippings and add mushrooms and 3 tbsp green onions and saute until tender. Sprinkle 2 tbsp. flour in chicken and mix in thoroughly. Add 2/3 cup chicken stock, 1/4 cup dry sherry and stir and scrape all of the brown bits off of bottom of pan. Add 1/2 tsp. chopped rosemary and 2 tbsp. chopped parsely. heat through for 3-5 minutes and then pour over chicken. Bake at 375 covered for 40 minutes or until chicken is tender.
