Nacho Salad with Tortilla Chip Dippers image

Serve with a generous handful of scoop-shaped tortilla chips (such as Frito's® Scoops®) with each serving. Keeps in an airtight container for 2 to 3 days in the refrigerator and tastes better and better!

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 large tomato, diced
1 ½ cups grated Monterey Jack cheese, or more to taste
1 (4 ounce) can sliced black olives
½ cup diced fire-roasted red peppers
½ lime, juiced
2 tablespoons chopped cilantro
½ teaspoon salt
½ teaspoon ground cumin

Steps:

  • Combine black beans, corn, tomato, Monterey Jack cheese, olives, red peppers, lime, cilantro, salt, and cumin in a large bowl. Stir well to combine.
