MY FAVORITE MEXICAN CHICKEN CASSEROLE image

Number Of Ingredients 15

1 whole chicken or 6 chicken breast
1 bag of Spicy Doritoes
2 Tbsp of purple onion(chopped finely)
1/2 cup chopped bell pepper
1 cup grated sharp cheddar cheese
1/2 cup of shredded montery jack cheese
1 can cream of chicken soup
1 can cream of mushroom soup
1 can of HOT Ro-Tel
2 Tbsp chili powder
1 tsp garlic salt
3 Tbsp chopped jalapenos
1 tsp cayenne pepper
garlic powder to taste
1/2 cup chicken broth

Steps:

  • roast chicken and remove from bones. Place a layer of chips in bottom of 9 x 13 inch pan or casserole. Pour enough chicken broth (1/2 cup) broth over chips to just moisten. Mix shredded chicken with all other ingredients except for the cheese together and put over chips. Top 1/2 with both cheese and bake uncovered @ 350 for 45minutes. Put the other 1/2 of cheese during last 10 mins of cooking
