Mustard Potato Salad image

After one bite, we can see why this is Beverly's go-to potato salad recipe. It's delicious! The creamy mustard mayo dressing with the soft potatoes is a great contrast to the crunchy bits of celery and pickles. Make sure to add this to your cookout menu this summer. So good!

Number Of Ingredients 9

4-6 large russet potatoes peeled, diced, and boiled
6-8 large hard-boiled eggs, diced
1 c chopped dill pickles
1 medium onion, chopped
1 c chopped celery
2-3 Tbsp prepared mustard
3/4-1 c mayonnaise
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. Put all ingredients in large bowl. Mix well.
  • 2. Adjust seasoning as needed. May need more mustard, salt, pepper, or mayonnaise
  • 3. Refrigerate until cold. Overnight is best for flavors to blend. Enjoy.
