MUSHROOM-STUFFED TILAPIA ROLLS image

1/4 cup olive oil
1 large onion, quartered
4 large shallots, peeled
1 bunch flat parsley
4 cups mushrooms, diced small
1/4 cu basil leaves, packed, chopped
1 cup fresh bread crumbs, g/f ok
2/3 cup feta cheese (crumbled)
pinch nutmeg
ground pepper to taste
8 tilapia fillets
veggie spray
paprika

Steps:

  • preheat oven to 375 heat oil in large skillet in processor, coarsely grind onion, shallots and parsley saute until translucent add mushrooms, saute until most liquids evaporate turn off flame add remaining stuffing ingredients, mix thoroughly put some stuffing in center of fillet, close fillet around fillet place, seam down in baking dish, leave no empty space in pan-stuff space with alum foil rolled up drizzle oil on top of fillets, sprinkle with paprika bake about 30 minutes serve hot or at room temp
