Steps:
- Place ham bone in large pan and cover with water. Add celery, onion and bay leaf. Cover and simmer for 2 hours. Strain. Skim broth. Stir in Mushroom Soup, rice, salt and pepper. Bring to a boil. Stir. Cover and simmer for 20 minutes. Meanwhile, saute mushrooms in butter. Add to broth with minced parsley and mustard. Blend well.
