Mushroom Chips image

Number Of Ingredients 6

2 tablespoon Coconut Oil
1/4 teaspoon Sea Salt
1/4 teaspoon Black Pepper
1/8 teaspoon Cayenne Pepper (optional)
1 pound Fresh Oyster Mushrooms (ONLY this type)
1 batch Smoky Shallot Dip

Steps:

  • Preheat oven to 400. Place wire rack on a large baking sheet. In a large bowl combine first 4 ingredients (through cayenne pepper). Add mushrooms; toss to coat. Spread mushrooms on rack.
  • Bake about 30-35 minutes or until slightly crisp. Cool 5-10 min. (mushrooms wil crisp while they cool). Serve with Smoky Shallot Dip
  • In a bowl combine 1/2 cup mayo, 2 Tbsp finely chopped shallot, 1 tsp snipped fresh thyme or sage, and 1/4 tsp smoked paprika.
