MUSHROOM BARLEY SOUP[ image

Yield 10-12 servings

Number Of Ingredients 10

1/4c corn or veg oil
1 large onion - diced
2 stalks celery diced small
4 cloves garlic - crushed
3 qts beef or chicken broth
1 c pearl barley - rinsed
2 carrots peeled & diced
2 lbs mushrooms, sliced
1/4 tsp pepper
salt to taste

Steps:

  • heat oil in bottom of 5-6 qt pot and saute onion, celery & garlic until veg start to turn transparent but not browned (10 mins) Add broth,barley, carrots & mushroms. simmere gently stirring from time to time, until barley is tender m(about 2 hours)if soup gets too thick add more broth or water. Taste for seasonongds. Can use dried mushrooms - use 1/2 cup dried for 1 lb fresh- soak in hot water to cover 20 mins. strain mushr. soaking water thru paper coffee filter and substitute for equal amount of broth
