Steps:
- heat oil in bottom of 5-6 qt pot and saute onion, celery & garlic until veg start to turn transparent but not browned (10 mins) Add broth,barley, carrots & mushroms. simmere gently stirring from time to time, until barley is tender m(about 2 hours)if soup gets too thick add more broth or water. Taste for seasonongds. Can use dried mushrooms - use 1/2 cup dried for 1 lb fresh- soak in hot water to cover 20 mins. strain mushr. soaking water thru paper coffee filter and substitute for equal amount of broth
