MUSHROOM AND GOAT CHEESE TARTLET image

2 tbsp. butter
1 shallot, chopped
2 garlic cloves, chopped
1 lb wild mushrooms, chopped
8 oz. goat cheese
1/4 cup truffle or olive oil
1/4 cup parsley, chopped
60 phyllo-pastry tartlet shells (These little pastry cups are available in the freezer section of any supermarket and they come in packs of 15 or 60.)

Steps:

  • Preheat oven to 350. In a large saute pan over medium heat, melt the butter. Add the shallot and garlic, stirring constantly for 1 minute and then throw in the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Take your food processor and throw the contents of the pan in the processor with the goat cheese, oil and parsley. Then turn it on. Pulse it and give it a taste. Add some salt and pepper if needed. Then dump it all in a bowl and spoon it into the pastry cups. Put them on a baking sheet and bake for 5 to 8 minutes, or until pastry shells are golden brown. Serve immediately.
