Steps:
- Preheat oven to 350. In a large saute pan over medium heat, melt the butter. Add the shallot and garlic, stirring constantly for 1 minute and then throw in the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Take your food processor and throw the contents of the pan in the processor with the goat cheese, oil and parsley. Then turn it on. Pulse it and give it a taste. Add some salt and pepper if needed. Then dump it all in a bowl and spoon it into the pastry cups. Put them on a baking sheet and bake for 5 to 8 minutes, or until pastry shells are golden brown. Serve immediately.
