Steps:
- 1. Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.
- 2. Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.
- 3. Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.
- 4. Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
- 5. Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350ยบ oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
