Steps:
- Cook lentils first by bringing water to a boil and adding lentils. Bring back to a boil. Then reduce heat to low and simmer (uncovered) for about 20 minutes or until lentils are tender.
- In the meantime, sauté the onion and garlic in oil.
- Add the spices, and saute for another minute.
- Stir in the tomato sauce and a bit of water.
- Add the vegetables, and simmer, covered, until just soft.
- Add the salt, and then combine the vegetables into the lentils.
- Add the apple cider vinegar.
- Top with cilantro/parlsley.
