Morning Glory Muffins image

When I worked I would make these for many morning meetings. I think they really start out your day right. Warm and add some butter. So good!

Number Of Ingredients 15

2 eggs
2 tsp vanilla extract
1/4 c milk
3/4 c vegetable oil
1 c flour
1 c wheat flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 c brown sugar
1 c shredded apple
1 1/2 c shredded carrots
1/2 c shredded coconut, sweetened or unsweetened
1/2 c raisins
1/2 c chopped almonds

Steps:

  • 1. Wisk eggs, vanilla, milk, and veggie oil together in a big bowl.
  • 2. Add flours, baking soda, cinnamon, salt, and brown sugar - then mix until all ingredients are moist.
  • 3. Add remaining ingredients and mix well.
  • 4. Either grease muffin pan or put muffin cups in. Divide into muffin pan, each muffin about ¾ full. Makes 18 muffins.
  • 5. Preheat to 350 degrees, put muffins in. Reduce heat to 325 bake for 25 minutes (until toothpick comes out clean). Let cool for 5 minutes in pan, then transfer to cooling rack.
