MONTEREY CHICKEN image

Number Of Ingredients 13

5 TBS olive oil
2 lbs chicken breast
salt and black pepper to taste
1 cup finely chopped onion
2 carrots peeled and chopped
4 garlic gloves, peeled and minced
1 cup chicken broth
1/2 cup orange juice
1 cup canned crushed tomatoes
1 TBS dried rosemary
1 zucchini, sliced
1 yellow squash, sliced
grated zest of an orange

Steps:

  • Heat oil in a large skillet. Pat the chicken breast dry, season with salt and pepper. Cook for 5 minutes, turn, season again and cook for 5 more minutes. Chicken should be a pale golden brown. Remove chicken from skillet and reserve. Add onions, carrots and garlic-cover and cook until vegetables are tender. Add stock, OJ, tomatoes and spices. Cook for 15 minutes uncovered. Add chicken, simmer for 20 to 30 minutes until chicken is done. Sprinkle with orange zest and serve.
