Mom's Zucchini Casserole image

Number Of Ingredients 7

4 cups cubed zucchini (about 4 to 5 zucchini)
3/4 cup shredded carrots
1/2 cup chopped onion (optional)
6 Tablespoons butter
2 1/4 cups bread stuffing mix, divided
1 can cream of chicken soup
1/2 cup sour cream

Steps:

  • Saute zucchini, carrots and onions in butter. Stir in 1 1/2 cups stuffing mix, soup and sour cream. Turn it into 1 1/2 or 2 quart casserole dish.
  • Toss remaining stuffing mix (3/4 cup) with some melted butter and sprinkle over the top.
  • Bake for 30 minutes at 350 degrees F.
