Moms tuna melt casserole. image

I always loved when my mom would make this comforting casserole, it is so yummy. I now make it for my grandchildren.

Number Of Ingredients 9

16 ounce(s) corkscrew macaroni
2 tablespoon(s) butter
2 tablespoon(s) flour
1/2 teaspoon(s) each, salt and pepper
3 cup(s) milk, i used fat-free
2 cup(s) shredded swiss cheese, divided, i used reduced-fat
3 - 6 oz cans tuna in water, drained, flaked
2 large heirloom tomatoes, cut into 1/4"-thick slices
1/2 cup(s) breadcrumbs, i used italian style, but you can use plain

Steps:

  • Heat oven to 400. Spray a 9" x 13" casserole dish w/ cooking spray. In saucepan, over low heat, melt butter. Stir in flour, salt and pepper. Stirring, cook 1 mins.
  • Spoon mix into casserole dish. Arrange tomatoes on top. Sprinkle w/ breadcrumbs. Cover dish w/ foil and bake 20 mins. Uncover and bake 10 more mins, or until bubbly.
