MOM'S SPANISH RICE image

Yield 3-4 people

Number Of Ingredients 10

1 pound Laura's ground beef
2 large onions chopped
1 green pepper, chunked
1 box mushrooms, chunked
salt and pepepr to taste
red pepper flakes
2 cups Minute Rice
14.5 oz can whole tomatoes, including liquid
14.5 oz can tomato sauce
grated cheese to top

Steps:

  • Preheat pan, brown beef. Add onion and rice, stir to coat. Add tomato items and heat till bubbly. Pour into 9x13 pan in which a bit of olive oil is spread and the chunked pepper and mushrooms await. 375 degree oven for about 45 minutes, covered. Then uncover and top with cheese, melt uncovered. Serve.
