MOM'S SOCK-IT-TO-ME COFFEE-CAKE image

THIS WAS ONE OF MY MOMS FAVORITE BACK IN THE '90'S..

1 package(s) butter cake mix, divided [we use duncan hines]
2 tablespoon(s) brown sugar
2 teaspoon(s) cinnamon
1 cup(s) pecans or walnuts, finely chopped
4 - eggs
1/3 cup(s) oil
1/4 cup(s) water
1/4 cup(s) sugar
1 cup(s) confectioners' sugar
1 OR 2 tablespoon(s) milk

Steps:

  • PREHEAT OVEN TO 375 DEGREES
  • GREASE AND FLOUR A 10 INCH TUBE PAN OR BUNDT PAN.
  • STREUSEL FILLING:
  • COMINE 2 TBSP. CAKE MIX, BROWN SUGAR AND CINNAMON... STIR IN NUTS... SET ASIDE
  • CAKE:
  • MIX CAKE MIX, EGGS, SOUR CREAM, OIL, WATER AND GRANULATED SUGAR IN A BOWL.
  • BEAT AT MEDIUM SPEED FOR 2 MINUTES.
  • POUR TWO-THIRDS OF BATTER INTO PAN.
  • SPRINKLE STREUSEL FILLING NOW OVER THE BATTER.
  • SPOON REMAINING BATTER EVENLY OVER THE FILLING.
  • BAKE FOR 45-55 MINUTES OR UNTIL A TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN.
  • COOL IN PAN 20 MINUTES; INVERT ONTO SERVING PLATE. COOL COMPLETELY.
  • GLAZE:
  • COMBINE CONF.SUGAR AND MILK IN A BOWL. STIR UNTIL SMOOTH. DRIZZLE OVER CAKE.
