MAMA NEELY'S SPICED PECAN CAKE

Butter, for greasing pan
1 1/4 cups chopped pecans
3 tablespoons brown sugar
2 1/2 teaspoons ground cinnamon
1 1/2 cups confectioners' sugar
2 tablespoons lemon juice
2 tablespoons milk
1 package golden cake mix
1 cup sour cream
1/3 cup vegetable oil
1/4 cup sugar
2 tablespoons all-purpose flour
4 large eggs

Steps:

  • Preheat the oven to 375 degrees F. Grease a 13- by 9-inch pan.
  • For the filling: In a medium bowl, stir together the pecans, brown sugar and cinnamon until nicely combined and the pecans are fully coated.
  • For the glaze: In a second medium bowl, whisk together the confectioners' sugar, lemon juice and milk until all the sugar is fully incorporated and there are no lumps. Set the glaze to the side.
  • For the cake: Into a large bowl, add the cake mix, sour cream, vegetable oil, sugar, 1/4 cup water, flour and eggs. Using an electric mixer, beat the ingredients until fully combined, about 4 minutes. Pour about half of the batter into the prepared pan. Spread the pecan filling on top and swirl into the batter. Pour the next half of the batter over and spread to make an even layer.
  • Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Remove from the oven, place on a cooling rack and let cool in the pan for 30 minutes. Then invert the cake onto a plate or platter, and let cool completely.
  • Whisk the glaze a bit to make sure it's still smooth and then drizzle all over the cake. Let the glaze set a bit and serve!

1 (18.25 ounce) package butter cake mix
4 eggs
2 cups sour cream
1 teaspoon vanilla extract
1 cup white sugar
⅔ cup vegetable oil
1 cup chopped pecans
½ cup butter
1 cup white sugar
½ cup buttermilk
1 teaspoon baking soda
1 teaspoon ground cinnamon
¾ cup packed brown sugar

Steps:

  • Mix together the cake mix and eggs. Fold in the sour cream. Mix in the vanilla, 1 cup sugar, oil and pecans.
  • Pour half of batter into a 9 x 13 inch pan. Combine the ground cinnamon and brown sugar. Sprinkle over the batter. Pour the other half of the batter over top.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes.
  • To make Icing: Bring to a boil 1/2 cup butter or margarine, 1 cup sugar, buttermilk and baking soda. Prick cake all over with fork and pour hot icing on cake.

1 package(s) yellow cake mix
2 tablespoon(s) brown sugar
- TOPPING INGREDIENTS
1 teaspoon(s) cinnamon
1 teaspoon(s) chopped nuts
2 tablespoon(s) confectioners' sugar
- STREUSEL
4 - eggs
1/2 cup(s) oil
1 cup(s) chopped pecans
1/2 cup(s) sugar
8 ounce(s) sour cream
1 teaspoon(s) cinnamon

Steps:

  • Mix cake mix, sugar and oil well.
  • Add eggs, beat well.
  • Add sour cream and nuts.
  • Grease bundt pan with butter.
  • Mix and sprinkle streusel mix in bottom of pan, pour 1/2 cake mix into pan.
  • Top with topping mix.
  • Pour rest of batter in and bake at 350 for 55-60 minutes.

1 (18 ounce) package butter recipe cake mix or 1 (18 ounce) package yellow cake mix
4 eggs
1 cup sour cream
1/3 cup vegetable oil
1/4 cup water
1/4 cup sugar
2 tablespoons cake mix (reserved)
2 tablespoons brown sugar
2 teaspoons cinnamon, ground
1 cup nuts, finely chopped
1 cup confectioners' sugar
1 -2 tablespoon milk

Steps:

  • Preheat oven to 375°F.
  • Grease and flour a 10-inch tube or bundt pan.
  • For streusel filling, combine 2 tablespoons cake mix, brown sugar, and cinnamon in medium bowl; stir in pecans.
  • For cake, combine remaining cake mix, eggs, sour cream, oil, water, and sugar in a bowl.
  • Beat at medium speed with electric mixer for 2 minutes.
  • Pour two-thirds of batter into pan, sprinkle struesel filling.
  • Spoon remaining batter over filling.
  • Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean.
  • Cool in pan 25 minutes, and invert onto a serving plate, and then cool completely.
  • For glaze combine confectioners' sugar and milk in a small bowl.
  • Stir until smooth, and then drizzle onto cake.

2 teaspoon(s) cinnamon
1 cup(s) pecans or walnuts, finely chopped
4 - eggs
1/3 cup(s) oil
1/4 cup(s) water
1/4 cup(s) sugar
1 cup(s) confectioners' sugar
1 OR 2 tablespoon(s) milk

Steps:

  • PREHEAT OVEN TO 375 DEGREES
  • GREASE AND FLOUR A 10 INCH TUBE PAN OR BUNDT PAN.
  • STREUSEL FILLING:
  • COMINE 2 TBSP. CAKE MIX, BROWN SUGAR AND CINNAMON... STIR IN NUTS... SET ASIDE
