Mom's Meatloaf image

My Mom made this frequently when I was growing up. When I moved north for college I rang her up for the recipe. It was full of hand fulls of this, a couple of glugs of that, and "until it looks right." I did my best to measure the ingredients. I find I go by my nose or until it smells right. LOL, my Mom would be proud!

Number Of Ingredients 10

1 lb ground beef
1 large egg
5 oz can evaporated milk
2 Tbsp dried onion
1 Tbsp dried parsley
3 Tbsp worcestershire sauce
1/4 tsp salt
1/2 tsp pepper
1 c cracker meal
1/2 c ketchup

Steps:

  • 1. Preheat oven to 350 degrees. In a mixing bowl place hamburger, egg, evaporated milk, and seasonings. Hand mix until blended and a little soupy.
  • 2. Add cracker meal a little at a time until well incorporated. Shape into a loaf and place in a loaf pan. Bake for 45 minutes.
  • 3. Remove from oven and slice part-way through about 1 inch apart. Spread ketchup over top. Bake for another 15 minutes. Remove from oven and allow to rest at least 5 minutes.
  • 4. Meatloaf sandwiches are my favorite leftovers!
