Mom's Cheesiest Mac & Cheese image

My mom makes this recipe for just about every family function we have, everyone loves it. I get as much of the cheese pre-grated as I can, it helps cut down on prep time.

Number Of Ingredients 12

1 1/2 pkg large elbow macaroni (16-oz pkg.)
2-4 Tbsp butter
2 Tbsp flour
2 c milk
1/2 tsp salt
lots of freshly ground black pepper
1 lb sharp or extra sharp chedder, shredded
1/4 lb mild chedder, shredded
1/4 lb mozzarella cheese, shredded
1/4 lb swiss cheese, shredded
1/4 lb colby jack cheese, shredded
parmesan cheese, shredded (for topping, to taste)

Steps:

  • 1. Prepare pasta according to package directions for al dente. Set aside.
  • 2. Mix cheese together in a large bowl (excluding Parmesan)
  • 3. In a small bowl add salt, pepper and flour to cold milk, whisk. Set aside.
  • 4. Spoon 1/3 of the pasta into a lightly greased baking dish (11x15 or 5qt); add dots of butter, top with 1/3 cheese mixture, pour 1/3 milk mixture over cheese (stir each time) - repeat until ingredients are gone.
  • 5. Top with Parmesan add pepper to taste.
  • 6. Bake at 350° for 25-30 minutes or until bubbly and slightly brown on the top. Let stand 10 minutes before serving.
