How to make Mom's Bread Pudding with Caramel Sauce

Caramel Topping
1/4 cup butter
1/4 cup white sugar
1/4 cup brown sugar
1/2 tsp vanilla
Bring to a boil and boil for 3-5 minutes until it coats a spoon.
Spoon warm caramel sauce over warm bread pudding and serve!

Steps:

  • Scald 2 cups milk and pour over 4 cups bread crumbs. Cool. Add 1/4 cup butter (melted), 1/2 cup sugar, 2 eggs (slightly beaten), dash of salt, 1/2 cup raisins, 1 teaspoon vanilla and 1 teaspoon cinnamon. Bake for 45 minutes to 1 hour (until center is set) at 350 degrees.
  • Tear up day-old bread and press down in to a 2 quart mixing bowl to the 4 cup measure line. If you don't press it down, you won't have enough bread. You want it fairly dense.
  • Scald 2 cups milk. I use a 2 cup glass measuring cup and just microwave it on high for 2-3 minutes until steamy. You can also bring it near boiling on the stove, until steamy. Pour over the bread crumbs and let cool for 20-30 minutes.
  • Once cool, add the remaining ingredients.
  • Stir well by hand until well blended.
  • Pour into a square baking dish or round casserole dish, sprayed with non-stick cooking spray.
  • Put in oven preheated to 350 degrees. Bake for 45 minutes to an hour. The center should be set, spring back when touched and no longer shiny. Edges and top should be just beginning to turn brown.
  • You can serve plain or top with caramel sauce. You can use ready made caramel ice cream topping or make one quick yourself.
