Steps:
- Preheat oven to 350°F. Mix apples and eggs together well. Add sugar, cinnamon, oil and mix well. Add flour, salt, baking soda (& walnuts) and mix well.
- Butter the bottom of a 9x13 loaf (or Bundt) pan and pour in the batter.
- Bake for approx 1 hour. Check the center with a toothpick near the end. If it begins to burn on top, cover it loosely with foil.
