- 1. Preheat oven to 325 degrees F. Spray an 8×8 baking pan with cooking spray. 2. In a large bowl combine the flour, cinnamon, ginger, soda, powder, gum and salt. Whisk well until any lumps are broken up. 3. Using a stand mixer, combine shortening, sugar, molasses, and hot water. Mix until well combined. 4. Slowly add the flour mixture to the wet mixture and mix on medium speed, using a spatula to scrap down the sides of bowl. Mix until combined. 5. Pour batter into prepared pan. 6. Bake for 40 to 50 minutes, until inserted toothpick comes out clean. 7. Cool completely before cutting and serving. 8. Serve with a dusting of powdered sugar if desired.
