Moistest Carrot Cake ever!! image

I know your thinking, "not another carrot cake recipe". However, I have made several, but this one is incredible. I have been making this for about 10 years. It comes out so moist. Enjoy!!!!

Number Of Ingredients 14

2 cup(s) grated carrots
4 large eggs
2 cup(s) sugar
1 1/2 cup(s) wesson oil
2 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 1/2 tablespoon(s) cinnamon (i usally use a bit more)
ICING FOR CAKE
1 package(s) cream cheese
1 stick(s) melted butter
1 teaspoon(s) vanilla
1 box(es) powdered sugar

Steps:

  • For the cake: mix carrots, sugar & eggs. Then add dry ingredients. Bake at 350 degrees for 1 hour and 15 minutes. I use the papmered chef stoneware 13 * 9 and it comes out great.
  • For the icing: mix ingredients and beat until smooth.
