I know your thinking, "not another carrot cake recipe". However, I have made several, but this one is incredible. I have been making this for about 10 years. It comes out so moist. Enjoy!!!!

Steps:
- For the cake: mix carrots, sugar & eggs. Then add dry ingredients. Bake at 350 degrees for 1 hour and 15 minutes. I use the papmered chef stoneware 13 * 9 and it comes out great.
- For the icing: mix ingredients and beat until smooth.
